Visual Aspect: Dark, dense purple to inky black

Nose: Aromas of black currant, fig and plums, coupled with cedar, clove and spice

Palate: Full-bodied, velvety smooth and very well-structured; rounded and ripe, with firm

tannins; lingering finish

Food Pairing: Complements red meats, poultry and hard cheeses

Wine Description: Blend of 85% Cabernet Sauvignon 15% Carmenere. Aged 18 months in new French oak barrels before bottling.

winemaker’s notes:  Grapes are handpicked at the end of April and subjected to a cold soak over 4 days. Whole berries are fermented on the skins and remain in contact with the skins for 26 days. The wine is aged 18 months in new French oak barrels before bottling

Tasting Notes:  Rumored to be the wine of choice for the once trapped Chilean miners (not really).
