Valdobbiadene Prosecco Superiore D.O.C.G. Spumante Extra Dry

AIM OF THE PROJECT: to create a sparkling wine with a marked character and elegance. With the brut version, to enhance the balance between aromas and flavour and thereby obtain an extremely versatile and captivating
glass of fine bubbles.
AREA OF ORIGIN: grapes coming
from vineyards in the municipality of
GRAPES: pure Prosecco grapes of D.O.C.G. quality together with Pinot Bianco and Chardonnay grapes..
PROCESSING: secondary fermentation with charmat method for minimum of 30 days with
constant temperature control between 16-18°C.
The product is controlled daily with tasting by
the oenologist of the Progettidivini Cellar to
check the correct progress of fermentation.
TYPE: Spumante Brut.
COLOUR: bright straw yellow.
AROMA: apple and pear pervade the glass bringing a touch of fresh fragrance.  The tone brings to mind the wine fermenting during the harvest.
FLAVOUR: well-structured, dry but fruity with hints of pear and apple. An explosive nose and a long-lingering taste.
CLASSIC ACCOMPANIMENT: fresh shellfish and raw fish, excellent as an accompaniment for appetizers.
SUGGESTIONS: put beech and chestnut wood in a brazier. Select equal size pieces of chicken, pork and rabbit. Thread them onto a long steel skewer, alternating a piece of meat, a slice of fresh streaky bacon and sage leaves,
and season with coarse salt. Leave the meat to slowly “sizzle” in the embers for at least four hours, basting the skewer with the cooking juices. Serve with polenta (corn meal mush). A glass of bubbly at 6°C is recommended while watching the ”Speo” (skewer) finish cooking
and afterwards to go with the piping hot skewered meat.
SERVING: serve in a large glass to appreciate to the full the fine perlage and the intense aromas.
