The 2007 Reserve Cabernet Sauvignon was selected one barrel at a time from our best lots of Cabernet Sauvignon grown in the county’s most renowned appellations. The limited production of 1,331 cases represents less than one percent of our total Cabernet Sauvignon for the 2007 vintage and allows us to select only the finest barrels from our best lots for this reserve blend.
The harvest of Cabernet Sauvignon for the 2007 vintage began in late September and lasted until mid October. Each vineyard was picked only after reaching its peak of ripeness and flavor. The grapes were crushed and fermented in stainless steel tanks for 10 to 17 days. The wine was then aged in French oak barrels for 24 months.
